Job Summary

Our client a well reputed Hospital in Dubai looking for Diet Chef- Hospital Experience.

 

MAIN DUTIES:
 

  • Coordinates the Diet food preparation assignments of Commis Cook (Diet) who assist with preparation, ensuring that Commis Cook (Diet) perform cooking assignments correctly
 
  • Responsibilities include planning and coordinating the preparation of the entire line of diet food products for one or more meals per day.
 
  • Prepares and cooks a full range of diet bulk and for diet single orders including, but not limited to, room service
 
  • Prepares and cooks a full line of diet food for breakfast, lunch dinner and snacks items; and a limited number of bakery type foods
 
  • Prepares foods that adhere to standardized recipes involving different levels of difficulty to meet established standards
 
  • Ensures precise weighing and measuring of ingredients and standardized preparation methods, reviews diets, recipes, specific foods, portion size and quantities required for the menus, meals and diets are pre-determined for the Commis Cook (Diet)
 
  • Prepares special liquid formulas
 
  • Assist Executive Chef to train new cooks in metabolic procedures and techniques
 
  • Makes judgments about products being prepared at different steps during the preparation process to ensure that quality meets standards
 
  • Assists Executive Chef with recipe development, standardization, and yield testing
 
  • Performs quality control checks on food as required
 
  • Takes daily inventory of items stored in production unit and communicates needs to Supervisor
 
  • Maintains a clean, orderly, and sanitary work area
 
  • Use department computer to enter requisitions as required
 
  • Plans menus together with the Chef De Partie / Sous Chef
 
  • Supervises the activities of Commis Cook (Diet)
 
  • Orders food, kitchen supplies, and equipment for diet food preparation
 
  • Demonstrates techniques to assistants and advises on diet food cooking procedures
 
  • Prepares and cooks diet food
 
  • Explains and enforces hygiene regulations
 
  • Monitors equipment and supplies, as well as maintains temperatures
 
  • Charts and prepares special orders for tray line, and charts and prepares diet short orders for assistants
 
  • Checks diet food to ensure quality and if food is prepared as per recipe
 
  • Ensures diet food is well presented
 
  • Makes sure Kitchen is hygienic and functional
 
  • Cooks food by a range of methods (i.e., baking, braising, frying, roasting or steaming)
 
  • Reviews menu and production sheets to determine items needed for each day
